To recreate this dish, all you have to do is cook your jacket potato how you normally would. The trick here is in the toppings.
However, the recipe does suggest that you bake the potatoes in the oven at 200C after having pricked them. If you are going this route, then you need to cook them fo around one hour and 20 minutes.
Then, you simply slice your mushrooms to the size that you would like and fry them. Once they have cooked, you mix them with the sour cream. In this recipe, a sour cream and chive dip was used to add that extra bit of flavour, but you can just add chives to sour cream if you want it that way.
Among the other toppings suggested by Good Food are vegan chickpea curry, whipped feta and sumac, turkey chilli and stir-fry chilli beef.
